Ok, so tapas might not get you a gold on the track, but it may get you gold stars for being a top host. Get your friends together, pop on the olympics, cheer your socks off and eat TAPAS. It’s yummy, and is great for big groups because there are so many different things to choose from. It is basically an exotic buffet!
So we enjoyed ours on my deck due to the lovely weather, and because the olympics hadn’t started yet. Tapas is also great cold, so makes a really good summer spread. What’s more is it looks a lot more impressive than it really is because it is so simple to do; effortless tastiness.
Get yourself a few nice loaves of bread, tear them up and dip them oil and balsamic vinegar for a great starter or accompaniment to all the other dishes! Then stock up on olives, sunsweet tomatoes, sundried tomatoes, mozzarella balls, feta cheese and did I mention olives? They all compliment eachother perfectly and are great to pick at nervously while watching your favourite athlete.
If you eat meat, gather in some spanish sausage, chorizo and spanish ham. Lidl is really good for all of these!
You can be as adventurous and as lazy as you like with it all. We cheated a little bit and tried out the new 3 dishes for £6/ 5 for £9 tapas range at Tesco. Being the only vegaquarium in a group of animal eaters we did get a chorizo dish, which is a key part of most tapas. If you’re strapped for time I recommend the range, it’s cheap and tastes very authentic.
Stuffed tomatoes- You will need: some large tomatoes, 1 avocado, chopped olives, 1 teaspoon of paprika, 1 scoop of mayo, grated garlic
1) Hollow out your tomatos
2) Mash up your avocado with the mayonaise, olives, paprika and garlic
3) Stuff your toms. Done!
Aubergine rolls- You will need: Aubergines sliced 1cm thick lengthways, crumbled feta cheese, sliced mozzarella cheese, pesto, toothpicks
1) Brush your aubergine slices with olive oil and grill them on about 7 mins on both sides until cooked.
3) Brush one side of the cooked aubergine with pesto, then lay on a peice of mozzarella and some crumbled feta
3) rolllllll it up and stab it with a toothpick. Done!
Rosted peppers- You will need: However many peppers you think you will eat, but remember they shrink in the ovan! Some chilli flakes, olive oil
1) Slice your pepper up
2) Put them on a pan with lots of olive oil and your chilli flakes
3) Roast them for about 30 mins. Done!
